Kahmylia’s Refried Beans

Today, I’m excited to share my daughter’s recipe for refried beans! When my daughters were teenagers, I decided that it would be a good idea to start giving them more responsibility in the kitchen.  So, a few nights a week they would each take a turn to make and serve dinner. Whoever had Tuesday night had to learn how to make refried beans, because…TACO TUESDAY. For the last few years, Kahmylia has been in charge of Tuesday night, so she has made a LOT of refried beans.  She has developed her own way of making them, and I have to say they are delicious! I hope you love them as much as we do.

Equipment needed

  • A large skillet
  • A potato masher

Ingredients: 

  • 6 cups of cooked pinto beans
  • 3-4 tablespoons of oil
  • 1 tablespoon of chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt to taste

Instructions

Step 1. Heat 3-4 tablespoons of oil in a skillet. You want to lightly and evenly coat the bottom of the pan.  

  • Note 1
    • We use olive oil or avocado oil. Traditionally lard is used, and definitely more than 3-4 tablespoons! Any neutral oil will be effective for this recipe.  
  • Note 2
    • You can check the heat of the oil by flicking a drop of water on the oil to see if it pops. If it does, it’s ready for step 2!

Step 2. Carefully add 6 cups of cooked pinto beans to the hot oil. The oil will spatter! 

Step 3. Mash the beans with the potato masher until they reach an even consistency.

Step 4. Incorporate the spices into the mixture.  

Step 5. Add 1 cup of shredded cheese. Optional but delicious!

    • You are welcome to use the variety of cheese you like best. Some of our favorites are cheddar, Colby jack, and Mexican blend.
